Our Thai Chili Lime flavor is the crowd favorite, it's like a bowl of spicy and sour Thai Tom Yam soup, but in jerky form, and with zero sugar and 31g protein.

We went with the authentic herb combo that drive much of Thai cuisine:

  • Organic galangal (ginger's goth older sister)
  • Organic lemongrass (the smell of a health spa in a jungle)
  • Organic makrut lime leaf (that savory and intoxicating je-ne-sais-quoi)
  • Organic lime juice (for a little bit of sour)
  • Birds-eye chili (for that slow-burn chili kick)

What Is Calamari Jerky?

We developed our recipe to work with the California Market Squid, which is a wild-caught small fish found right off the coast of California. We marinade and then gently dehydrate whole pieces of the fish until it hits a texture like a conventional meat jerky.

It's shelf-stable so you can throw it in your backpack for a satisfying snack whenever you need it!

The Hermit Story

We started The Hermit because we were unsatisfied with portable protein options, which either are hyper-processed (like protein bars and protein powders) or use industrially-raised and environmentally-destructive land meats like Beef. 

While traveling around Asia we kept encountering squid in diverse forms, and after learning about what a clean and sustainable protein it was, and about the California Market Squid, we knew we wanted to make a clean-ingredient jerky using this amazing and underutilized protein source.
